UW extension offers statewide food preservation workshop May 29-31

The increase in home food preservation has prompted an introduction to food preservation workshop offered by the University of Wyoming Cooperative Extension Service (UW CES).

The session is Friday through Sunday, May 29-31, at the Snowy Mountain Lodge in Centennial and is led by the UW CES Nutrition and Food Safety Initiative team.

“Home food preservation is experiencing a resurgence given recent food-borne illness outbreaks in the general food supply, the trend toward local food and sustainable food practices and the current economic situation,” said Sarah Francis, a nutrition and food safety extension educator. “The two-day workshop is a statewide training for community residents interested in learning safe food preservation practices.”

Sessions will be led and facilitated by UW CES educators and will discuss U.S. Department of Agriculture-approved methods.  Francis said those attending will increase their knowledge of safe food preservation practices, including canning and dehydrating.  Objectives include identifying proper canning techniques for both low- and high-acid foods and increasing understanding of dehydration.

Cost is $85 per participant and includes five meals plus accompanying education materials, including a canning cookbook.  This fee does not include lodging.  Individuals should preregister by May 15.  For registration information, contact Francis at (307) 328-2642 or sfranci4@uwyo.edu.
